Where It All Began


In 2011, Chef Angelo Masarin, Graziano Sbroggio, and Carlo Donadoni opened a modest trattoria in Miami's Midtown neighborhood. Driven by a shared passion for the honest, generous flavors of Northern Italy, they created a restaurant that felt like walking into a family kitchen in the Veneto countryside.

From day one, the focus was on signature salumi dishes and traditional homemade classics — the kind of food they grew up eating. Handmade pasta, slow-braised meats, and imported Italian ingredients set Salumeria 104 apart in a city full of Italian restaurants. The word spread quickly.

What started as a single neighborhood trattoria has grown into four beloved locations across Florida.

Chef Angelo Masarin


Born in the Venetian Province of Treviso, Angelo began his culinary career in Milan at the age of 17. He trained at Istituto Professionale Alberghiero and the Culinary Institute of Castelfranco Veneto, building a rigorous foundation in classical Italian technique.

His path led him through Italy's most prestigious establishments — Harry's Bar, Cipriani, and La Locanda Cipriani, the legendary Torcello island inn where Ernest Hemingway penned "Across the River and Through the Trees." In those kitchens, Angelo served royalty, celebrities, and dignitaries, refining a style rooted in simplicity, quality, and respect for ingredients.

In 2009, Angelo brought his talents to Miami, working at Casa Tua and Cecconi's before co-founding Salumeria 104 in 2011. His philosophy remains unchanged: cook with the finest, freshest ingredients and let them speak for themselves.
